  • Biography
    Jeffery Elsworth, PhD is the Associate Professor of Hospitality Business Entrepreneurship in The School of Hospitality Business at Michigan State University. He comes by his interest in foodservice operations honestly as he was a successful manager, general manager and franchise trainer of managers for 20 years before turning to academics. Jeff’s experience in the restaurant industry gives him a unique perspective, which he uses in the classroom to teach his students the essential skills needed for success in the foodservice and hospitality industry.

    Jeff’s research interests include customer perceptions of restaurant ownership, hospitality entrepreneurship, foodservice purchasing, foodservice operations, food safety and foodservice inspection media reporting issues, hospitality wage determinants, and hospitality small business finance issues.

    Dr. Elsworth presently teaches Introduction to Hospitality Business Ownership and Entrepreneurship, Advanced Hospitality Business Ownership and Entrepreneurship, Introduction to Food and Beverage Management, Facilities Maintenance and Systems Management, and Introduction to Hospitality Business as well as a Foodservice Industry module for the Masters level Food Protection and Defense course offered by Michigan State’s Food Safety and Toxicology Center. Dr. Elsworth has previously taught courses in Food Safety and Nutrition, Quality Management, Advanced Foodservice Operation, Quantity Food Production Systems, and a Master level course in Hospitality Facility Planning and Design.

    Dr. Elsworth presently serves as the Chair of The School of Hospitality Business’ Undergraduate Programs Committee, and The School’s representative on the Broad College Advisory Council. At the University level Dr. Elsworth serves on the Michigan State University Union Advisory Board, the University Committee on Student Affairs, and as a rotating chair for the University Academic Integrity Hearing Board.

    Dr. Elsworth has worked on numerous projects related to entrepreneurship, restaurant ownership, and restaurant management in the Mid-Michigan area and has consulted with numerous hospitality businesses on start-up issues and operations management.

    Jeff earned his Bachelor of Science (’81), Masters of Science (’98) and PhD (’01) degrees in Hospitality and Tourism Management from Purdue University in West Lafayette, IN.
